Plantains a la yummy

For this you need:
1/2 tsp orange peel (they sell it with the spices. You don't need to get an orange and shred the peel)
1/4 tsp cinnamon
1/8 tsp allspice (little goes a long way with this)
1/2 cup sweet onion, thinly sliced
1 chopped apricot
1 black plantain, cut into sixteen parts
1 tsp olive oil

Alright, your plantain should look like this:

Your onions should be cut like this:

In wok or large frying pan bring oil to low to medium heat:
temp on stove
Coat pan once oil is warm then sprinkle spices over pan. Add onions and stir around until they are evenly coated and sizzling a bit. Then and plantain. More around until these are evenly coated as well. Cover and cook for 8-9 minutes, stirring occasionally. Add apricot and cover for five more minutes or until there are braised brown parts covering most of the plantain pieces, making sure to stir a few more times before done.

Oh, that's such a good idea! You could probably get it published for real because of the personal recipes-and the fact that you're getting kids to eat it as well. I mean, cookbooks made specifically for kids are great, but there has to be one that combines it all, you know? A meal that you can make for yourself as an adult, but that your kid will like as well.

Like unisex, but...uhh...uniage?

But really, a great idea for a gift! : D

The closer I get to putting it together I'll probably post pages up on here. I have a notebook where I write everything down as I do it and a folder with a lot of pics of different things.

I posted it on vegancooking and people seemed to have liked the pictures.
